Most of you probably know how the smell of freshly baked cookies can make YOU feel. If the person baking those cookies really knows what they are doing; the smell could elevate your mood. Yes, this was supported by studies.
Ok, the smell of freshly baked chocolate chip cookies can make you have a better mood, what about the taste? Yes, you need your cookies to taste great!
But you have gluten intolerance and have to stay gluten free; what are you suppose to do now?

When I was choosing from the submitted recipes I was trying to share with you only those recipes that had healthier, wholesome, organic ingredients, less sugar AND less time making them. Who needs to spend more time baking for your family?

Gluten Free Chocolate Chip Cookie Recipe
Gluten Free Chocolate Chip Cookie Recipe Instructions:
Preheat the oven to 375 degrees.
Mix organic sugar, brown sugar, vanilla extract, organic butter and beaten eggs in a large bowl by hand.
Add in the flour, Kosher salt and aluminum free baking soda.
Your dough may get be very stiff. You can even use a professional quality mixer for that first step. You need to be sure that your dough is very well mixed before continuing.
Stir in chocolate chips by hand. You'll have to use a wooden spoon and mix it well.
You can now add walnuts at this time, optional.
Keep mixing and folding the chocolate chips and nuts into the dough until they are evenly distributed. (to have your perfect gluten free cookie)
Get the cookie sheet ready. Do not grease it.
The next step would be to drop the dough by rounded tablespoonfuls at least 2 to 2and ½ inches apart onto ungreased cookie sheet.
Bake your gluten free cookies for about 10 minutes or until they have nice, light brown color.
Do not leave them inside the oven for too long after because they may get too dry or too crispy.
Let your cookies cool completely. Do not pick them up when they are too warm. Remove from cookie sheet.
You can use a flat spatula to remove the cookies from the sheet.Now it’s time to enjoy them!

Mix and cream your organic butter, brown eggs, organic sugar, organic lemon extract and milk (or milk substitute) together.
Add multi-purpose gluten free flour and aluminum free baking powder and mix until very smooth and moistened.
With a teaspoon, take a small portion of your gluten free dough and roll into a small ball.
Place on greased with butter cookie sheet.
Pre-heat the oven to 375F.
Bake your gluten free cookies for about 10 minutes at 375F or until lightly golden on the bottom.
Let your cookies cool down.
You can add an icing, if desired.
Lemon icing ingredients:
Mix icing ingredients together until they are a sauce-like consistency.
Spray over each of your gluten free cookie and then let them dry. (this icing may drip down the sides.)

Preheat the oven to 375F degrees.
Mix organic butter and brown sugar together until it turns into a uniform mixture.
Add brown eggs, sea salt and organic vanilla. Then mix them well.
Add baking soda, baking powder and the gluten free flour into the mixture very slowly, avoiding making clumps.
Add Kefir or buttermilk to the mixture. Mix very well.
Mix in the shredded coconut.
Grease your baking sheet with butter.
Drop your gluten free batter by teaspoons onto baking sheet.
Decrease the oven temperature to 350F and bake for about 15 minutes or until lightly golden brown.
Let them cool and enjoy!

Preheat the oven to 375° F.
Grease cookie sheets with your favorite oil.
Mix the butter, agave syrup and egg whites until smooth.
Mix in the applesauce, vanilla extract and the apple juice concentrate.
Combine gluten free flour, aluminum free baking soda, salt and organic cinnamon.
Mix into the applesauce mixture.
Mix in gluten free oats and chopped cranberries.
Drop rounded teaspoonfuls onto the greased cookie sheets.
Decrease the oven temperature to 350F.
Bake for about 15 minutes or until cookies are lightly browned.
Cool for about 1 minute on the cookie sheets before removing.
Let them cool down and enjoy!
