Quinoa With Pine Nuts And Apricots

I think your site is great. Thanks for all the info. I want to share what I cook for my family and they actually love it.
1 cup quinoa
1 tsp salt
1 tbs freshly squeezed lemon juice
1/2 cup pine nuts
1/2 tsp ground coriander
1 tsp ground cumin
1/2 cup dried apricots, chopped
2 tbs olive or grapeseed oil
1 bunch scallion - green onions, sliced
1 red bell pepper, finely chopped
1.Bring 2 cups of water to boil in a medium size saucepan. Stir in quinoa, cover, and simmer for about 10 minutes. Turn off the heat, and let the grain remain covered for another 10 minutes.
2.Transfer quinoa to large bowl, and lightly fluff with fork every couple of minutes until the grain cools down.
3.Toast pine nuts in the dry skillet over medium heat, stirring until nuts are golden brown, about 3 minutes. Set aside.
4.Add pine nuts, slat, lemon juice, cumin, coriander, olive oil or grapeseed oil, apricots, green onions and bell peppers to quinoa, and toss until quinoa is coated. Enjoy!
Serves four. 10 grams of protein per serving.
