Many gluten sensitive patients that continue consuming gluten containing products develop Candida and yeast overgrowth. Experts compare cravings for gluten containing foods to very serious drug addictions. The craving could be very strong and the person can get very moody and cranky without their bagels. The compounds that are made from breaking down of gluten can make that “feel good” feeling and cause the body to crave it more.
Gluten Tests. There are traditional tests for gluten intolerance. They include anti-endomysial antibodies test, tissue transglutaminase, anti-gliadin antibody test, genetic markers and even intestinal biopsy. Gluten intolerance or sensitivity, Sprue, Celiac disease, non-tropical sprue, gluten enteropathy or adult Celiac disease are different names for the same disorder which is autoimmune disorder with malabsorption. Tropical sprue occurs in patients in tropical climates. Regular Celiac disease is not the same as Tropical Celiac disease. Older tests for sprue may not be as accurate as newer gluten tests.
If you have been diagnosed or suspect gluten intolerance you need to know that you should ALWAYS avoid wheat, barley and rye. You should consider buckwheat, quinoa, amaranth, millet, corn and brown rice. It will take time to get used to these grains but they can be so delicious if prepared the right way. My family enjoys buckwheat and quinoa with veggies. It’s great to add some extra-virgin coconut oil when cooking these grains. These grains contain much more protein than wheat grains. So adding great quality oil would make these healthy grains a full meal: just enough protein, carbs and good fat. Try this for at least two months and you will see the difference.
If you restart gluten containing products after two month and feel gassy and bloated feeling you would realize that you need to stay off gluten for good. There are high chances of someone with gluten sensitivity to also have gastro intestinal bacterial or parasitic pathogen. Get checked. Many patients with gluten problems also have dairy intolerance. You may want avoid pasteurized dairy products. There are more and more gluten free products in the stores now. But be very careful. So many of these “Gluten Free” foods are loaded with sugar. Gluten sensitivity is manageable. But it’s so important for you to become proactive about your health. You can do it. YOU can be HEALTHY, gluten free and HAPPY.
