I can't say enough about gluten free diet. Gluten free diet has helped many patients, including myself, feel better. It even helped patients that did not show any signs and symptoms of gluten allergy.
Staying gluten free for at least 60 days can decrease gut inflammation tremendously. I recommend it to all of my clients.
If you are seriously considering going gluten free, you can:
Eat buckwheat, quinoa, amaranth, millet, corn and brown rice. Do not eat wheat, rye and spelt. Oat is questionable.
It will take a little time to get used to the taste of these grains but they can be so delicious if prepared the right way.
My family enjoys buckwheat and quinoa with veggies.
Don't forget to add some extra-virgin coconut oil when cooking these grains. This may improve the taste and fill in the nutritional gaps.
These grains contain much more protein than wheat grains. So adding great quality oil would make these healthy grains a full meal: just enough protein, carbs and good fat.
