Just get good quality ingredients. I prefer organic, free range chicken for all the chicken recipes.

These gluten free recipes I tried myself and they were approved by my family members. 


This chicken soup recipe was sent from Helen (Los Angeles, California).

Comfort soup that is great in the winter and her family loves it.

Ingredients:

2 carrots, diced

1 tbs dried parsley

6 cloves of garlic, minced to 2 tbs

6 cups of organic chicken broth or organic vegetable broth

1/4 cup organic gluten free soup noodles (we use Glutino brand)

1/2 cup raw kasha (buckwheat groats)

2 cups of diced boneless chicken, cooked or raw

1/2 tsp dried thyme

1/2 tsp dried oregano

1/2 tsp dried tarragon

1/2 tsp black pepper

1/2 tsp cayenne pepper

1.Place all ingredients in large kettle. Bring soup to a boil. Cover and simmer 20 minutes, or until kasha is cooked and noodles are soft.

2.Season to taste with salt. Serve immediately.

Serves 6. 15 grams of protein per serving

I think it's really great chicken, hearty soup. It would be great if you use ceramic cookware. It doesn't have the danger of the teflon. 

The next two gluten free chicken recipes were perfected by Linda (NY). The first one was originally adopted from Garden Of Life and the second was from her cookbook.

Gluten Free Chicken Recipes:

Grilled Marinated Chicken Recipe

Serves 6

Ingredients

1 ¼ cups extra virgin olive oil

1/3 cup fresh parsley, chopped

3 Tablespoons lime juice

3 Tablespoons hot pepper sauce

1 small tomato, diced

1 teaspoon sea salt

1 teaspoon black pepper, ground

2 cloves of garlic, minced

1 Tablespoon dried oregano

6 boneless organic chicken breasts

Directions:

Mix together all of the ingredients listed above(except for the chicken).

Line those chicken breasts in a long, shallow glass pan.

Pour marinade over the chicken and let marinate in the refrigerator for at least two hours.

When it’s ready to cook, preheat the grill on medium heat.

Place organic chicken on the grill and cook for 20 minutes or until cooked all the way through.

Serve hot.


Gluten Free Chicken Marsala:

Ingredients • 1/4 cup all-purpose gluten free flour for coating( we used Bob’s Mill brand, the red package)

• 1/2 teaspoon salt

• 1/4 teaspoon ground black pepper

• 1/2 teaspoon dried oregano

• 4 skinless, boneless organic chicken breast halves - pounded about 1/4 inch thick

• 4 tablespoons extra-virgin coconut oil

• 4 tablespoons olive oil

• 1 cup sliced portabella mushrooms

• 1/2 cup Marsala wine

• 1/4 cup cooking sherry

Directions: 1. In a shallow dish or bowl, mix together the flour, salt, pepper and oregano. Coat chicken pieces in flour mixture. 2. In a large skillet, melt butter in oil over medium heat. Place chicken in the pan, and lightly brown. Turn over chicken pieces, and add mushrooms. Pour in wine and sherry. Cover skillet; simmer chicken 10 minutes, turning once, until no longer pink and juices run clear 


Gluten Free Chicken Recipes:

These gluten free chicken salad recipes were from Sandy (St IsL, NY).

Basil Chicken Salad

1 Cup Cooked Organic Chicken Breast, Cut into Chunks

1 Cup Cooked Organic Brown Rice

1/2 Cup Organic Red Grapes, Sliced in Half

1/2 Cup Vegenaise mayo

1/4 Cup Sweet Basil, Chopped

2 Tablespoons Chopped Sweet Onion

1/4 Teaspoon Coarsely Grind black Pepper

1/4 Cup Chopped Pecans

Combine all of the ingredients except for the pecans and chill thoroughly. Add pecans just before serving. Recipe makes 4 servings.



Gluten Free Chicken Recipes:

Gluten Free Pesto Chicken Salad

Ingredients:

2 pounds of organic chicken thigh meat, cubed(better to use white meat)

5 cups cooked spiral gluten free brown rice pasta from Trader’s Joe

1/2 cup unrefined sunflower oil

2 tbsp basil

1 tsp. sweet basil

1 medium tomato, diced

2 small carrots, chopped

2 cups chopped spinach

1 garlic clove, minced

1 small chopped sweet onion

2 tbsp chopped pine nuts

1 1/2 tsp Sea salt

1 tsp pepper

1/2 cup burgundy

Start with cooking gluten free pasta. Look on the instructions for pasta’s cooking time. Add oil into the pasta before it cools to prevent sticking. Let it cool while you prepare the rest of the salad.

Dressing: mix sunflower oil, pine nuts, the two basils, onion, garlic, pepper, and 1/2 tsp of sea salt.

Put in all in a bowl.

Refrigerate while the chicken is being cooked.

Over medium-high heat, simmer organic chicken cubes with the remaining 1 tsp of sea salt and the burgundy, stirring constantly, for about 10-12 minutes. When done, drain off the liquid.

Toss all the ingredients together.

If you want to prevent a mess try using a bowl with a closed lid.

Chill it in the fridge and serve.
