When I recommend my clients to start fololowing gluten free diet I realize that many simply don't know much about it. That was the reason I started Gluten Free Website with great, helpful information.

The first most common question from my patients: What is gluten?

Gluten is a combination of the proteins glutenin and gliadin. These proteins are present in wheat, rye, barley, kamut and most likely oats.

Gluten protein is what makes those bagels so chewy and that dough so smooth. Many people enjoy gluten containing foods like breads, pasta, bagels and different sauces. And the scary thing is that many of these people are truly addicted to these carbohydrates. But for some, gluten is really an enemy.

Patients with Crohn’s disease, ulcerative colitis disease, IBS and many other gastrointestinal diseases can present with Celiac symptoms and actually also have Celiac disease. It is very possible to have both conditions at the same time.

“I have wheat allergy symptoms; does it mean I have gluten allergy symptoms and Celiac disease?”

I get these types of questions a lot. Anything that has a word “allergy” most of the time means an immediate reaction. For example, true wheat allergy would be showing up immediately maybe with hives, swelling and others. While gluten intolerance symptoms can go unnoticed for some time.

A person with gluten intolerance cannot digest the protein parts of these common grains: wheat, barley and kamut, and some others.

The body recognizes this food as a foreign particle and starts attacking it. This can cause inflammation and the damage of the intestinal lining. And that’s where Celiac disease symptoms show up with bloating, diarrhea, constipation, intestinal gas, and cramping. This can eventually turn into food allergy because the body can start reacting to that “invader” food particle with an inflammatory response.

Gluten intolerance is an autoimmune process, and not a food allergy. Celiac disease symptoms or gluten intolerance symptoms are common among people of Irish, Scandinavian, Scottish, English and Eastern European origin. The most common Celiac disease symptoms include, but not limited to: weight gain, depression, digestive symptoms and fatigue.

Not all people will react in an extreme way to gluten even if they have gluten intolerance. But if you have Celiac disease symptoms it is very important that you avoid all kinds of gluten containing products.
